Winter Salad – think about the rainbow colour wheel. What's missing in your day?
This delicious, crunchy salad gives you lots of vitamins and minerals without thinking about it too much! Dark red in the freshly roasted beetroot (iron), purple in the finely sliced red cabbage, finely chopped cucumber, celery and radish and lots of delicious dark greens with coriander and parsley (helps clear the cells of toxins). Some protein in the haloumi and it's totally delicious for a treat (cooked in the pan with lemon juice and dukkah sprinkled on after). This was surprisingly filling, satisfying and gave me lots of energy for the rest of the day.
