Breakfast Heaven – for 2

Thanks to our favourite yoga teacher Renate for the recipe.

  • Warm a frying pan with a spray of olive oil and cut the kernels off a corn cob.  Stir for a couple of minutes then add the same amount of feta (full fat to absorb the maximum amount of calcium available).  Whisk 2 organic free range eggs and gently stir through until a light scramble.  You can either pile that onto a bed of baby spinach and or rocket, or wrap it up with the greens.  

  • Crunchy, whole grain goodness (O's and B's swap corn for quinoa – have pre cooked like brown rice) for fibre and to keep you feeling full.  

  • This feast fills you with protein to think with, restore and repair your body.  There's also plenty of Vit C, folate, iron and potassium in the greens.
