This is my go to vegetable concoction. Steamed green beans, baby carrots, zucchini panfried (or baked if the oven is on), chopped tomato, cos, 1/2 pomegranate arils, 1/4 chopped parsley, 1/4 cup chopped coriander or mint. Toss the lot with your favourite homemade dressing. i like a drizzle of pomegranate molasses stirred into lemon juice, walnut & olive oil. Sometimes I add quinoa and goats cheese for something more substantial. It’s also great on the side of baked barramundi, barbecue meat and chicken.
