Would you rather a boring ham sandwich or energy packed and tasty Classic Moroccan Chick Pea, Lentil & Lamb (optional) Soup?
Divine aromas, vegetarian protein, fibre, Lamb if it's for meat eaters. Easy and freezes well! I just enjoyed a bowl while sitting by the fire.
Here's the recipe, let me know if you like it. Heat 1 TBSp olive oil in a soup pot then add 2 chopped spanish onions, 2 diced celery sticks and 2 small carrots diced. Stir for 2-3 minutes then add 2-3 garlic cloves lightly crushed, 1 TBSp cumin seeds and 450g chopped lamb shoulder (if using). Stir until lamb is browned then add 2 tsp ground turmeric (or 2 inches fresh chopped), 2 tsp paprika, 2 tsp cinnamon, 2 bay leaves, 2 TBSp tomato puree. Pour over 1 L water or vegie stock, add 100 g rinsed green or brown lentils, 100 g chick peas that have been soaked overnight (or use 400g tin organic) bring to the boil and simmer 1 hour (or put in the oven on 150C). Then add 400 g tin chopped organic tomatoes, or 4 fresh chopped tomatos or 400 g tomato passata. Simmer or cook another 30 minutes or until lamb is tender. If not using lamb cook brown rice, coarse cracked burghul or couscous to serve with it. To add some green nutrition and flavour serve with 1/3 cup chopped parsley and coriander per bowl. Enjoy!
