These are a great snack and much healthier than chippies!  They have plenty of fibre and are beneficial for those who need to lose belly fat, have hormone issues, high cholesterol and diabetes. They are also tasty and easy to make. Just soak chickpeas overnight and cook the next day. Bring to the boil and simmer for around an hour. You can do a big batch then freeze them once cooked before roasting. Preheat oven to 170C or 150C fan forced, line tray with baking paper and spread 2-3 cups of cooked chickpeas, sprinkle with 1/2 teasp of your favourite salt. Roast for 45 – 60 minutes until crispy. You could also sprinkle with 1 teasp ground cumin and 2 teasp paprika if you like spices. Once cooled seal into a glass jar. Have a 1/4 cup for a snack and that’s your daily intake of legumes sorted.
