Refreshing Energy Packed Lunch with Crunch!

Mmmm, I loved tucking into this crunchy lunch on a hot day. Chicken, Radish Salad, Beans & Salsa. All were leftovers, so remember, when you’re getting dinner ready, make extra for lunch. Thinly slice 3 radishes, 1 lebanese cucumber 1/2 peeled and chopped into chunks, 6 grape or cherry tomatoes quartered, 1 shallot, 1 cup of parsley chopped, 8 mint leaves chopped. Dressing: 1/2 – 1 lemon juiced, 1 dessertspoon organic extra virgin olive oil, 1 dessertspoon plain yogurt. Stir dressing through salad. Serve over left over roast chicken, meatballs, a boiled egg, fish, tofu, or whatever protein you like. For vegetarian partial protein, fibre and to keep you full add some Black Beans (or your favourite legume) these were partially mashed with 1/4 cup coriander leaves and lemon juice with spicy tomato salsa on top.  Sensational!
