Pizza with Indian spices - as fiery as you'd like it!

Celebration Indian style Pizza? Yep, it’s healthy! I served this up to friends on Friday night for after work drinks and supper. Try some yeast free Roti flatbread as the base. Only 6 minutes in the oven at 180C. Roast ½ small pumpkin cubed. Saute 1 chopped onion & 2chopped garlic cloves in a little oil, add 1cm cubed eggplant (approx 400g), cook stirring until golden. Add 400g free range mince (I used veal), cook until browned, sprinkle 1 teasp of your favourite curry powder. Stir in 1/3 cup tomato kasaundi (optional, I bought it at the deli). Place roti on baking tray and top with veal mixture and 2 chopped tomatos (seeds removed). Bake for 6 – 8 minutes until base is crisp. Serve with a mix of ½ cup plain Greek style yogurt with ½ cucumber coarsely grated and 2 Tbs chopped coriander or mint. Pomegranate seeds sprinkled over look and tasty lovely. Great for a weekend lunch and a casual Sunday night dinner.
