I love a heaped dessertspoon of this sprinkled on fruit, yogurt & soaked chia or oats at breakfast.  It’s great for a nutritious high fibre snack too. 1 Tablespoon sprinkled on poached fruit & coconut yogurt or banana ‘icecream’ makes a healthy dessert.

1/2 cup sunflower seeds, 1/2 cup pumpkin seeds, 1 cup almonds, 1 cup walnuts, 3/4 cup shredded coconut, 2 teasp cinnamon, 1 teasp all spice, 1/2 cup goji berries, 2 teasp coconut oil.  Buy as many of these ingredients organic. I also like to buy local almonds and walnuts as the imported ones are irradiated.  You can vary the nuts and seeds too. I chop them up a bit after they’re cooked.

Toss the nuts & seeds with the coconut oil and spices. Roast them at 160C until starting to brown. Takes around 15 minutes.  Remove from oven and sprinkle over the goji berries and coconut.  I was given some edible rose petals so the last batch had them sprinkled through. Once cool seal in a glass jar.
