2 cups chopped Dates, soak in hot water for 15 minutes, 1 cup shredded coconut, zest & juice of 1 lime, 1 1/2 cups raw nuts and or seeds (or nut butter), 1 teasp vanilla, toasted sesame seeds. Drain dates & blend to a smooth paste. Blend the coconut with lime zest & juice and add to dates. Process nuts & seeds to a paste or add nut butter to date & coconut mixture. Add vanilla. Mix thoroughly and roll into small balls. Roll in sesame seeds and chill in fridge. Can be frozen. You may like to substitute some other dried fruit for 1/2 the dates. I tried goji berries & golden raisins. You could also reduce the nut mixture by 1/4 cup and add in 1/4 cup cacao nibs. I also added 1 teasp cacao. Have one if you’re craving a sugar hit, great for the kids after school occasionally or with a cuppa after dinner for ‘a little something’ yummy! That will keep you away from a chocolate or lolly binge!
