The addition of fruit makes this different and refreshing in the summer heat: 1 cos lettuce leaves separated, 1 avocado sliced, 6 small radishes & 1 lebanese cucumber halved and thinly sliced. Cut the skin from 1/2-1 large pink grapefruit and slice (or swap with watermelon). Pour any juice from chopping board over salad, squeeze some lemon and drizzle olive oil over. You could also use your favourite vinegar instead. I had this with feta and some leftover chicken for lunch today.
