Brrr, it’s soup weather! How about something that has loads of Vitamin C for the immunity and helps the liver detoxify, oh and it’s yummy! Alright then… Cauliflower Chowder it is. 1 cauliflower roughly chopped including stems, 1 onion diced, 2 carrots diced, 2 celery stalks diced, 2 garlic cloves crushed, 1 Dstsp olive or coconut oil, 4 sliced nitrate free bacon rashers or prosciutto (optional), 1 bay leaf, 1/2 cup chopped parsley, healthy salt & pepper, 5 cups chicken or vegetable stock (for a creamy version you can substitute 1 cup of stock for 1 cup of your favourite milk, buttermilk – coconut could be interesting, I would also add indian spices to that).

Heat your soup pot on the stove and crisp up bacon if using, drain the pan and dry bacon on paper towel. Then lightly brown onion & garlic in oil. Add the rest of the vegetables & stir for a few minutes. Add stock, bay leaf and condiments. Bring to simmer and cook for around 15 minutes. Blend the lot and serve with bacon & parsley on top. Variation: you could sprinkle over some parmesan or stir through a blob of goats cheese. Lots of options for this soup.
