Are you eating legumes daily? The fantastic fibre keeps your cholesterol steady and hormones stable. Phew! Try my delicious Cannelini beans with meatballs, spanish onion and polenta.
Soak 1 cup cannelini beans overnight in water. Simmer until cooked (1hour ish), freeze what you aren't using for later. Stir through 1/2 bunch fresh spinach (it will wilt), add 1/2 roasted red capscium peeled & sliced, 1 desertspoon tomato paste and a bit of water if needed, 1/2 cup fresh chopped parsley. Use your favourite meatball recipe – mine had organic beef mince, chopped fresh mint, 1/2 teasp cumin, lemon zest and crushed garlic. Slow cook 1 large spanish onion in some olive oil and a sprig of fresh thyme for 1/2 hour until soft. For polenta stir 1 cup with water on the stove, add herbs like thyme, pepper, once cooked, 10 – 15 minutes add 1 TBSp grated parmesan. I had some soft with osso bucco that night for dinner. The rest I put into a pie dish in the fridge. Then you can slice it like pie, put under the grill to crisp & warm up with more parmesan on top. Yum!
