Thanks Sonia for another great recipe. Cheese & Broccoli squares – A great way to get those good greens in and some easily digestible protein in the ricotta.  1/2 a broccoli chopped & steamed, 5 large happy chook eggs, 4 – 5 Tablesp ricotta, 1 tsp aluminium free baking powder, 1/2 brown onion, chopped, a pinch of seasalt with iodine (Aluminium free), pepper. Preheat oven to 180. Spray casserole dish with olive oil.  Food process the broccoli, add to bowl and mix with the rest of the ingredients.  Press into casserole dish and bake for around 25 minutes or until golden and not too dry.  Enjoy with a salad of sliced red capsicum, cucumber and avocado, toss with some coriander, lemon juice and olive oil. Broccoli is one of the best liver detoxing foods and contains heaps of Vitamin C and folate.  When steamed broccoli has cholesterol lowering benefits.  It also contains high levels of Vitamin K and betacarotene.  These really help get the Vitamin D into storage – and we have a plague of low Vitamin D these days.
