Another tasty, quick picnic idea!You could do this with leftover turkey, free range chicken or chickpea patties. Chicken Pomegranate & Walnuts: This was a hit at our picnic by the lake last Sunday. Lots of vitamin rich greens, crunch and healthy fats from walnuts and the secret ingredient is Eggplant Kasaundi (I buy it from the Deli at Fyshwick Market or the local IGA supermarket). Start with a free range roasted chicken (Coles has them now), break it up removing fat, skin & stuffing. Place 3 decent handfuls of baby spinach and 1 handful of rocket in the bottom of a serving platter, drizzle some chicken stock (still in the bag if you bought it), top with chicken, crumble in 1/2 cup walnuts, sprinkle 6 chopped radishes, mix 1/2 cup plain organic yogurt with 1/2 cup eggplant kasaundi (or your favourite chutney/relish) and stir through. Grind some pepper and sprinkle 1 teaspoon of sumac (lemon flavoured spice) if you have it. That’s it!  You can make variations on this.  For Friday’s Solstice gathering I’m going to add sliced grapes.
