Nut & Seed Crunch Cookies, A bit burnt, so lucky I test ran the recipe… Only cook for 10-12 minutes not 20!!! until golden, not black. Anyway we all ate them and loved them. Here's the recipe from 'Blood Sugar' recipe book, I'll just suggest that you use organic nuts, eggs and fresh honey (not supermarket boiled stuff-I used Leatherwood, Yellowbox is the lowest GI – found that out at a conference on the weekend). 

  • The idea is they don't interfere with your energy levels like normal sugar laden biscuits. Preheat oven to 180. 1/2 cup almonds chopped, 1/2 cup walnuts chopped, 1/2 cup LSA, 2 TBSp sunflower seeds, 1 – 2 TBSp honey, warmed over hot water not microwaved, 2 eggs whites beaten. Pulse nuts in food processor until rough crumbs, add LSA and seeds, stir in honey, eggs and mix. 
  • Place teaspoon size mounds onto greased baking try, bake for 10-12 minutes and cool on wire rack. ENJOY! p.s. change nuts to suit your blood type.
