Have you every tried to poach chicken? It’s super healthy and easy. I had it sliced on a whole grain salad with tahini yogurt dressing. To keep an eye on portion size it was dinner on a side plate, 1 palm size protein, 1 1/2 palms of whole grain veggie salad & a generous dollop of dressing.
1 free range or organic chicken breast, 1 cinnamon stick, 1 bay leaf, 1/2 lemon squeezed and some zest, 1/2 star anise. Add chicken and other ingredients to a saucepan and just cover with filtered water. Bring to the boil then simmer for 15 minutes with lid on. Then turn off heat and sit in stock for 30 minutes. Then slice to have with whole grain salad or your veggies of choice. Keep the stock for soup or a casserole.

Tahini yogurt dressing: 1 dessertsp unhulled tahini (loads of calcium & some fibre), 3 dessertsp greek yogurt, 1 dessertsp lemon juice, 1 teasp sumac, chilli powder (optional). Mix and dollop on top of the poached chicken.
