Time for some new food inspiration! How about Satay Sauce without peanuts? I adapted this recipe from MindFood, serves 4. Satay Sauce: 200ml coconut milk, 5 Tblsp almond butter, 1 Tblsp tamari, 1 teasp fresh grated ginger, 1 garlic clove crushed, 1 lime juiced, pinch cayenne. Blend the lot, adjust flavours to suit. Rice Paper Rolls: Dip 20 into hot water then fill with shredded vegetables. Shred or grate 1 large carrot & zucchini, 1 cup bean sprouts or snow pea sprouts, handful coriander leaves chopped, handful mint leaves chopped, 1 teasp lime juice, 1/2 teasp tamari, 1 avocado sliced, lime wedges to serve. Serve with Satay Sauce. You could add some protein like prawns, chicken or tofu.
